I dont know about loaf, but I saw salmon patty on Rachel ray just the other day. Can of salmon, flaked up, an egg, some seasoned bread crumbs, chopped parsley or cilantro, lemon juice. One can makes 4 patties, and she grilled them and slapped them on a bun with lettuce, onion and roasted red peppers. Looked super good. A can of salmon has 35 grams of fat in it, so if it only made 4 patties it would be 10 grams per patty (counting the egg in there) So a couple grams for the bun, and then lite mayo, you have a meal right there. I would add a quarter of a cantelope and call it good!
