    Re: Indian Cooking

    Hi Indian Loosers!

I am sure you guys are doing the best and all of us have great ideas. I know my weaknesses. I love sweets and i have been struggling to avoid the sweets. When i go on "no sweets" diet the entire household goes on a diet. My daughter has adopted a grandma and she loves to bake for my two daughters. Everytime she comes she brings in a calorie bomb. I have to ask her to reduce the quantity. These days i have asked her to take girls over to feed them her love. The other day i just threw away a big cheesecake form cheesecake factory.

So i struggle to resist sweet. I am very good the entire day but at 4-6pm sometimes i go off the track. But most of the time i am staying with the calories. What i found to be very helpful and easy is the Tofu cubes in dal and Subji. I eat it for breakfast and i am good without any cravings till 2-3 pm. and same after my protein packed lunches. I have noticed that eating dals and subji with tofu keeps me non-lethargic. So give it a try.

Tofu 1 pack drained and cubed

1 tsp Oil in a iron Kadhai

Saute it for a short time till it becomes golden brown. save it to add to everything.

I use it with basil pesto and veggie and it tastes great.

    Be creative everyone.

    And once agian

    Good luck with weight loss

    Re: Indian Cooking

Hi I think Tofu is an interesting acquired taste for me. It is low in calories and i enjoy it as it keeps me fit and active whole morning. I have a problem with carbs as it makes me drowsy...

I chop the drained Tofu and then i stir fry in a very little oil...when it is a bit crispy i add a bit of Basil Pesto(home made with no cheese) and after that i add low fat Marinara with( i add a lot of vegetables to the marinar a and store it for a week).  I let everything cook and wait till i feel the tofu cubes have absorbed the flavour.

    You will love it.

Regarding me i am a late 30's Rajasthani (fauji family) i speak a few Indian Languages. I have lived in different states. i am in Chicago. Badly struggling with Weight issues. My blouses are 6-8 inches short on me. All this in 4 yrs!

    Re: Indian Cooking

I have discovered a few other things to make it easy with Alli,

Does anyone try Cilantro Hummus with Chillie Tortilla from Trader Joes?

We can make both the things at home!

    Hummus is easy

1 can Garbanzo benas (16 oz)(save water to make  the right consistency)

    3-4 Fresh Garlic pods

2-3 tsp Tahini (you can buy in a meditarrenian stores)

2 bunches of chopped Cilantro( Hara Dhania)

    1-2 hot peppers

Salt to taste ( i would advice a little bit of white rock salt)

Take a food processor and grind all the cilantro with peppers and garlic. Now add all the beans.

Keep grinding in a food processor till you get the right consistency of a spread.

    Re: Indian Cooking

Hope it is not too late for a reply- Your best option would be tandori chicken as it is marinated in spices and then dry "grilled" in a tandori oven... while I prefer vegetarian, when I go out for Indian, this is the safest option... maybe wheat paranta (stay away from pori as it is fried, even whole wheat chapati often has added butter though is an acceptable option). Add raita (Indian yogurt with onion, cucumber or potato and spices), ask for an indian "salad" which is cut up onion, tomato, cucumbe with a squeeze of lemon and salt.... a perfect meal!

As for vegetarian, your options can be limited because most places tend to use "a touch" of cream to boost flavor (for example- if the sauce is tomato based and it looks lighter than pure red- watch out, same goes for a "creamier" tumeric/yellow sauce). Most places use a lot of oil or butter or ghee- so you might order vegetarian if you are willing to "pour off" the oil and then blot with a napkin (or several).... dal (beans) are usually cooked with a minimum of oil, i for example: channa chole (curried chickpeas).

My husband is Indian, I love Indian food but rarely eat out (nor does he) because of all of the hidden fats... sadly! However, that said, if you are eating at a quality place and the food is not preprepared, then you might be safe to mention your dietary constraints to the waiter and hope you do not have to run to the bathroom. ...Maybe eggplant with tomatoes (baingan bharta),  cauliflower with potatoes or peas (aloo ghobi/ mutar ghobi) ...

If south Indian, try a dosa with sambar ( a HUGE crispy ultra thin pancake dish filled with a potato mixture and served with a very spicy/sour vegetable dal soup)- just eliminate 1/2 of the potato mixture and make sure it does not have an excessive amt. of oil - it should not apear shiny, rathe it should look like chunky mashed potatoes)- you can also get it without any filling.

Any way good luck with the food choices ... maybe finish off with chai tea or lassi (yogurt drink with rose water).

    Re: Indian Cooking

Well, my lunch was a success!

We went to a buffet.  I could tell that there was something (appetizer) that was fried so I avoided that all together.  I got some naan and some rice and a salad (american type) and then I got one cube of each of the 6 dishes on the buffet.  That way I got a taste of it all and I didn't go wild and I didn't go back.  I also drank a ton of water - they refilled my glass 4 times.  And I think I have done well.

    Basic Indian home cooking

    Basic Indian cooking method

Indian vegetarian home cooking is very different from restaurant cooking. What is served in restaurants is what Indians would prepare at home just a few times a year. The amount of cream and other fatty elements used is very less at home. It is not over cooked as it is in restaurants. Here is a basic method of making any kind of vegetables/Dal etc.Ingredients1tbsp oil½ tsp cumin seeds or ½ tsp mustard seeds¼ tsp Turmeric powder1 tsp coriander seed powder½ tsp pepper powder (mild from Indian stores)Salt to taste.  Vegetables for curry/gravy 1 diced onion1 diced tomatoFinely chopped Cilantro1 tsp grated ginger2 pods garlic grated Vegetables6-7 potatoes peeled and diced to half an inch size.1 cup frozen peas (thawed) MethodTake a pan which would take heat properly, heat the pan and add the oil when oil is hot add the cumin seeds or mustard seeds. As soon as mustard is done splattering add onion and let it change color keep stirring, now add ginger and after a minute add garlic. When onion looks a bit more cooked and it leaves oil add diced potatoes. Stir it and add a tsp of salt (or to your taste).  Right after that, add turmeric powder and stir it again. Lower the heat and cover it to cook for 2-3 minutes make sure that you stir it in between. When potatoes are almost cooked add green peas (thawed) and stir it again. When green peas and potatoes leave the oil add the cilantro and pepper powder and stir again. Be gentle when stirring. Now add one cup hot water to it. When water starts to boil add diced tomatoes to the pot. Let it boil till potatoes are cooked to your liking and everything is nicely blended, tomatoes are not cooked too. Serve it with Naan, Roti or rice. Garnish it with chopped cilantro. You can use the same step to make different soups with Dal, only different thing will be that tomatoes will be added right after ginger and garlic.  And then boiled/cooked dal is added. You can skip any thing from this step and change the order of the addition to give it a different taste. You can make this with a tsp of oil, or with different vegetables, only one vegetable, and just one bean, chopped spinach.Be creative……

    Re: Indian Cooking

i'd love more indian recipes so please all of you keep posting. I'm fairly new to indian food, but I've been vegetarian for 20 years.  i went to my friends house for indian this weekend and she made me tandoori gobi, and tandoori tofu skewers on the grill-pretty low in fat. her dal did have ghee in it, but i ate less of that (though i think i ate every pepper in the dal whole- yum!) and more of the rice, tofu and veg. it was a really great meal and no TEs.

although i've only made indian food from scracth myself twice, i think it can be done low fat and full flavor.

    keep sharing and good luck!

When everything got cooked i added the salt and tomatoes. I added fresh Cilantro just before serving. I making my kids and Husband to beg for roti...everytime i make my DH used to say it is so much like tortillas in Whole food. i stopped making them and starting buying from whole food after two weeks they are now begging me to make roti. !
