    semi vegetarian

    HELP! I only eat vegatables, fruit and seafood, no chicken, turkey, beef or pork. Need recipes other than what is out there. Anyone got some ideas or recipes?

    I HAVE YOUR SAME PROBLEM, I FOUND LAVASH (100 CAL AND ALL WHEAT)  WICH IS LIKE A SQUARE TORTILLA, AND I USE IT WITH REFRIED BEANS LETUCE TOMATO JALAPENOS AND LIME. THIS IS REALLY LOW FAT AND SOMETIMES YOU CAN EVEN ADD AVOCADO MANTAINING THE 17 GR OF FAT PER MEAL. I WILL RECOMED WEIGHT THINGS SO YOU DON'T GO OVER. ANOTHER THING THATS HELP ME A LOT ARE MORNING STAR PRODUCTS SOY PROTEIN.

    I, too, try to follow a diet that is mainly pescatarian (seafood as main protein), although I do occassionally eat chicken.  I love the site vegweb.com.  There are lots of great recipes and you can search for recipes by typing in an ingredient.  I often search for recipes by typing in my main ingredient into google (for instance, salmon recipes).  I always find something that I would like to cook, and most of the time nutritional information is available with the recipes.

    I grew up eating ceviche which is a cold “uncooked” seafood salad. However my mom was always iffy on the fact that the sea food was cooked with lime/lemon juice, so she’s par cook the shrimp first.

    Ingredients:

    1 package of imitation crab meat (use real if you’d rather, but this is the inexpensive version)

    1lb of shrimp

    1 cucumber

    ½ onion

    1 tomato

    ½-1 cup of ketchup –depends on how saucy you want it

    Juice of 2 lemons

    Clean out the shrimp

    Boil them with the shells on (add to taste)

    Shell them

    Chop up shrimp and crab meat

    Small dice tomato, onion, and cucumber (peel first of course)

    Toss together

    Add lemon juice

    Add ketchup until desired texture -this can go from salad-like consistency to having it look more like soup. It depends on you.

    This is usually eaten with tostadas, but we made a habit of just eating it straight.

    Note: I gave out measurements, but this is really a free-form recipe. If you love cucumber, but don’t really care for onion adjust to your likes. I’ve seen some people pour on the ketchup until you need a spoon (eewww) and others who just add a tablespoon or two.

    Also, it makes a ton. You’re going to be surprised how the ingredients really add up. And it tastes great the next day.
