    Since you can't use the nutritional information on the cake mix, how do you determine the calories and fat grams per piece? Any help would be appreciated. I'm trying this for dinner this evening. Thanks!

    Why can't you use the nutritional infor on the box?  It separates from prepared and as is.  Take a look and you will see.

    I thought of a way to figure out the calories and fat grams. I looked at the calories and fat grams per serving TIMES the servings in the box of cake mix. The same with the fat grams. Then I subtracted the calories and fat grams of the 3 eggs and 1 stick of butter. EX:

     I made chocolate cake

    12 servings X 260 calories=3,120-1,037=2,083 DIVIDED by 12 servings=174 calories per serving. Fat grams were 42 for the whole box so by taking out the stick of butter and 3 eggs, it's virtually fat free.

    I wanted a smaller portion so I made 20 cupcakes. Each cupcake is 104 calories with no fat. I'm going to freeze them for when I get a chocolate attack!

    You can't use the box nutritional numbers because "as prepared" takes into consideration the 1 stick of butter and 3 eggs, which you leave out if you use just the dry mix and the 12 ozs of diet coke. Instead, I figured out, you find the total calories and fat grams for the 'as prepared' and then subtract the calories and fat grams in the butter and eggs. then divide that by the number of servings you choose. Hope that makes better sense :)

    I looked on a box of Duncan Hines Cake mix and it has Nutrition Facts, Mix then baked.   Baked being with all the extras eggs, oil, ect.   So you would take the Mix Nutrition and what ever your Coke has in it. add those together to get your nutrition info.  Since I had a few different cake mixes here I looked and you have to go by the type of cake you are making since the calories differ from each flavor.

    I add one or two egg whites to give it a "cake" texture.  Add FF Cool Whip and some cocoa powder (if you NEED topping like me) you have yourself a pretty good 2 point cupcake.

    Diet Coke

    Chocolate cake mix

    2 egg whites

    FF whipped cream for topping
