    2 ingredient brownies

I found this recipe on from hungrygirl that is so simple and yummy.

1 box devil's food cake mix

    1 can of pumpkin

Mix the two together and bake as directed on the cake box.  You've added fiber and nearly eliminated the fat.  Here are the nutritional stats for you if you cut the whole thing into 28 pieces:

    82 calories, 1.75 fat,  .64 sat.fat., 0 chol., 159 sodium, 16 carbs, 1 fiber, 9 sugar, 1.1 protein, 44.6% vitamin A, 2.75% calcium, .25% vitamin C, 4.78% iron.

I loved them.  Even my kids who won't get near vegetables devoured these.  Of course, I did help it along by putting miniature m&m's on top.  Give it a try.  You'll be glad you did.

    Re: 2 ingredient brownies

Tried this recipe and it was great.  My 14 year old son who has been constantly complaining about our "new healthy eating plan" gobbled them up.  I did not disclose the secret ingredient!!

    Thanks, please keep sharing.

I went ahead and tried the small can and they are wonderful!

VERY moist, and my husband said they are the best low-fat brownies he's ever had!

    Re: 2 ingredient brownies

I tried these tonight and to quote Rachael Ray, "YUMM-O!" -- I had to add a trickle or two of water just to ensure a smooth consistency. I put these in muffin tines (all I had) and they are VERY moist. The recipe yielded 12 muffin cups so I wonder what this does to the caloric intake. Either way, no oil, no eggs, and the adder fiber of pumpkin, has to be a winning combo!

    Re: 2 ingredient brownies

You can also do the same thing with the Spice Cake mix. Just the cake mix and the 15oz. can of pumpkin. This is especially good during the fall time when everything is that warm, cinnamony spice scent. They are very dense, but they taste wonderful. And if you can find some all natural, no sugar added apple cider it is a wonderful compliment to the muffins. I put them in muffin cups and then whatever I can't eat within a few days I put in the freezer. When you are ready for one, pop it out, thaw it either to room temp or pop it in the microwave for a few and there you go. A good solution to the quick morning muffin!

    Re: 2 ingredient brownies

I used a can of pumpkin with a low fat brownie mix and found that they are really good too!  I love the idea of cutting out the oil and the egg.  I did the math (adding the nutritional analysis of the box of brownie mix and the can of pumkin), and figured out that if I cut it into 24 squares, I am creating an approximately 100 calorie snack.  The sugars are a bit high, but if I just have one a day (with some no-cal chocolate sauce and a dab of Cool Whip Free), I should be well within my limits.  YUM!

    Thank you!
