    substitute for pasta

    do you want spaghetti with sauce and little parm, get rid of the carbs and use a roasted spaghetti sauash, you never use spaghetti again,  and im Italian.

    what do you do with spaghetti squash to make it taste like spaghetti?

    My mom always baked it like any other squash, then went tender she would just take a fork and run it against the inside flesh and it would fall into the bowl looking like spaghetti :)  lol

    As far as finding it - it should be find in the produce department where any other squash (i.e., butternut, acorn) are found.  You will certainly find them at any fruit/veggie markets.

     Thanks for the tip!  I love carbs and it's great to find an alternative to pasta.  So, it really looks like spaghetti?  Have any of you found a good tasting lo sodium tomato sauce?

     If you're close to any of the Whole Foods in NYC they will have it.  So will Fairway; and some of the other major markets may have it; and most likely the 14th Street Farmers Market.

     Muir Glen, an organic brand of canned tomatoes, makes a no-salt variety of tomatoes and a tomato sauce.  It's available in most major markets like Stop & Shop, and Whole Foods.  If you Google "low sodium tomato sauce" you'll find lots of recipes to make at home. 

    This is the ideal time of year to make a big pot of tomato sauce using fresh tomatoes -- and then freeze it in small containers to have on hand.  I routinely make a quick sauce by just chopping a few tomatoes, sauteeing in olive oil and adding a little Marsala (or white wine), basil, oregano (and some crushed red pepper...because I like spicy).  Cook for 5 or 10 minutes, over medium heat, and you've got a nice quick sauce.  With no added salt!
