    Baked Fish?!?!?

    Hello All,

I have just realized that I loooove baked fish!  I used to eat my fish deep fried but never again.

Does anyone have any good flavorful recipes using baked fish?  Thanks in advance for your help!! :)

    Re: Baked Fish?!?!?

for my salmon I put a pinch of brown sugar and a squeeze a fresh orange over each fillet, it is fantastic.  Salmon is high in fat, but when served with low to no fat entrees it falls within your guidelines and is the HEALTHY kind of fat.

try it with lemon pepper or dill, it really makes it good.  Sometimes I use cajun spices too. We eat a lot of baked fish, it is really good grilled too.

     hi missportcity!

i love baked fish too!! yum!!  i like to bake it in foil, last night i sliced a potato really thin and made a foil pouch with the potatoes under the fish, put onions over the top and some "free" italian dressing over everything then i closed the pouch and baked it for 30min...ohhh wow! it was soooo good!

    Re: Baked Fish?!?!?

you can try baking fish in parchment paper along with your favorite veggies and seasonings. i did thyme, freshly cracked pepper, sea salt, olive oil, white wine and put the veggies in the corner of a big piece of parchment paper with tilapia on top (which is low fat and very versatile and cheap!) and added the splash of white wine on top, folded the parchment paper on top like an envelope, and pressed the edges together to seal it like a meat pie. baked in the oven @ 350 for 20 minutes...and you have a delicious meal and no clean up. just throw away the paper. its sooo fun and you can be creative.

    Re: Baked Fish?!?!?

I fixed the baked cod and vegetables recipe (the one that is in the alli menu plan), last night and it was excellent.  We had company for dinner, he and my husband loved it.  I have tried several of the menu plan recipes this week and so far they have all been very good and easy to prepare.

And if you use Sweet N Low brown sugar you get even less calories.  The flavor is still fantastic!

    Re: Baked Fish?!?!?

I have been on the plan for 3 weeks, and have incorporated a lot of baked fish and shrimp into my diet.  I sprinkle a light layer of Chinese 5-spice on top of my fish (haddock, cod) with some thyme, then bake it for 20-25 minutes at 400 degrees.  I bake it alongside some fresh veggies, such as asparagus, brocolli or zuchini.  I spray the veggies with a light coat of cooking spray before I sprinkle them with the 5-spice or garlic salt.  The flavor is pretty awsome and roasting veggies is WAY better than steaming them in my opinion...a lot more flavor. Just an idea...

    Re: Baked Fish?!?!?

I tried some Talapia baked in parchment paper at Red Lobster and I loved it.  It was baked in parchment paper with onion, sliced yellow and green squash and green and red pepper.  It was seasoned with lemon pepper (I think), but that is what I used when I tried it myself and it was awesome.  That might be something to try when you go out to eat.

    Re: Baked Fish?!?!?

You should try microwaving the fish.  It is moist and delicious.  I use halibut or salmon filets, lemon, onion, salt, pepper and microwave a 1lb filet about 4 minutes.  Make sure that it is covered as it can "pop".  Just check for doneness by placing a fork under it and lifting, if it lifts up and away it is done!

I haven't tried low fat mayo in homemade tartar sauce yet, but for that I use onions, worchestershire, mayo, sour cream, pickles, lemon and pepper.  I'll just adjust to lo and no fat versions of mayo and sour cream Yum!

    Re: Baked Fish?!?!?

Tuna steak! Just roll it in Mrs. Dash's garlic lime marinade (not too much). Bake. Set table. Enjoy. http://www.mrsdash.com/index.aspx

You can probably make your own version of the marinade if you prefer. It seems to be mainly garlic powder and lime juice, probably with some sort of binder to keep it all together --- ff yogurt or sour cream could work.

    Re: Baked Fish?!?!?

try toping your baked fish with salsa, not the store bought salsa, home made salsa, like pineapple salsa or mango salsa, makes all types of fish taste great and each fish brings its own disticting taste with the salsa. If you have a medium size piece of baked, grilled or broiled fish with the salsa, you will find that you will not have to put anything else on your plate.

    Re: Baked Fish?!?!?

    Baked Lemon Haddock Filets

    2 lbs. of Hadock Filets

1 Cup Wheat Bread Crumbs (unseasoned)

1 Pkg. Good Seasons Italian Dressing Mix or store brand

    2TBS Parsley flakes (dried)

2tsp. Grated Lemon Peel or Lemon Zest

    1/2 tsp Garlic Powder

    2 Eggs

    Lemon Juice

    /4 C margarine melted

Combine all dry ingredients and set aside. Beat two eggs and add lemon juice. Dip filets in Lemon juice/egg mixture and then coat with bread mixture. Place melted margarine on deep cookie heet and place breded filets on cookie sheet. Sprinkle any remaining bread crumb mixture over fish. Bake @ 650 degrees for approximately 25 minutes or until fish flakes with a fork.

My family loved this fish. I am not sure of the nutritional value of this recipe. I used Fleisschman's olive oil margarine (per my doctor to help lower cholestero) Fat content in this margarine is is 7g. No Trans fat. 60 calories from fat.
