Baked Lemon Haddock Filets
2 lbs. of Hadock Filets
1 Cup Wheat Bread Crumbs (unseasoned)
1 Pkg. Good Seasons Italian Dressing Mix or store brand
2TBS Parsley flakes (dried)
2tsp. Grated Lemon Peel or Lemon Zest
1/2 tsp Garlic Powder
2 Eggs
Lemon Juice
/4 C margarine melted
Combine all dry ingredients and set aside. Beat two eggs and add lemon juice. Dip filets in Lemon juice/egg mixture and then coat with bread mixture. Place melted margarine on deep cookie heet and place breded filets on cookie sheet. Sprinkle any remaining bread crumb mixture over fish. Bake @ 650 degrees for approximately 25 minutes or until fish flakes with a fork.
My family loved this fish. I am not sure of the nutritional value of this recipe. I used Fleisschman's olive oil margarine (per my doctor to help lower cholestero) Fat content in this margarine is is 7g. No Trans fat. 60 calories from fat.
