    Diet Coke Cake

I got this recipe from a friend on WW.

It is sooo easy and tastes so goood.

You need one box of milk chocolate cake mix and you mix it with one can of diet coke.   (DO NOT ADD OIL OR EGGS)

Bake for 25 min. at 350 degrees.

You can top it with fat free Cool Whip and a can of low sugar cherry pie filling.

I am not sure of the total fat grams but, it is only two points for a two inch square on WW.

You can also use lemon or white cake with diet Sprite.

But, I really like the Chocolate and so do my kids.

Be sure that you use Mik Chocolate cake mix, if you use the dark or fudge it will work but the cake doesn't rise and it is more like a fudge brownie.

    You can always experiment.

    Re: Diet Coke Cake

Can I use pound cake mix?  This sounds  really good.  Also, you mentioned that the serving was a 2" aquare so I am assuming I would use a square cake pan and not round?

    Re: Diet Coke Cake

I was just going to post about using a diet coke and a reduced sugar cake mix :)   My husband is diabetic so I'm always looking for easy, safe things for him to eat to have a treat every now and then.  I used a Pillsbury reduced sugar devil's food cake mix and a can of diet coke and it worked perfectly!!  I made cupcakes and they turned out to be 80 calories, 1.5 g fat and 17 g carbs.
