    Easter Casserole

    There was a post from a lady that was looking for this recipe: you could also use turkey sausage

    BREAKFAST CASSEROLE  
    3 c. French bread, cubed
    3/4 c. diced low fat ham (98% fat free)
    2 tbsp. diced sweet red pepper
    1 c. shredded fat free Cheddar cheese
    1 1/3 c. skim milk
    3/4 c. egg substitute
    1/4 tsp. each dry mustard, onion powder and white pepper
    Place bread evenly in baking dish (8" square). Layer ham, red pepper and cheese over bread. Set aside.

    Combine milk and next 4 ingredients. Pour over cheese. Cover and refrigerate 8 hours. Remove from refrigerator, let stand 30 minutes.

    Bake uncovered 30 minutes at 350 degrees. Sprinkle with paprika. Serve immediately.

    One pound turkey sausage cooked, drained and crumbled may be substituted for ham. (Pat out any and all excess fat with paper towel). 12 grams fat per serving.

    That sounds delicious!  Do you happen to know the nutritional info by any chance?

    Also, I've found this cheese substitute called "Veggie Shreds" that are cheddar cheese flavored (they're in the vegetarian section of the grocery where tofu and stuff is sold).  Anyway, they are really good and melt much better than fat free cheese.  They aren't fat free (70 cal, 4g fat, 0g sat fat for 1/4 c) but another option.  I think they are soy based - so lactose free if you need that.
