    Help with lunch

    So with me breakfast is pretty easy, I have that down.  Same thing with dinner, I get to cook all these cool new great recipes that I have found. 

    But lunch...well lunch is tough for me.  I was looking for some suggestions for lunch.  I am not into buying a lean cuisine or anything of that sort, I prefer what i call "real food" and sorry but those frozen things just aren't real to me.  The only prepackaged meal that I have found that I will actually eat are the Oscar Mayer Deli Creations- chicken bacon ranch, they are good and fit into my diet, but I don't want this EVERY day.  Sometimes if I had chicken the night before I'll cut some of that up and eat it on a salad, otherwise I have an extremely hard time with lunch.  Most of the time I am home for the lunch period so I have the entire kitchen so there are no restraints there, other than it has to be sort of fast, I don't want to spend more than 20 minutes for lunch.

     Here's something I enjoy for lunch:

    Chicken Pita Pocket

    1 pita round wheat

    3 oz shredded chicken (canned)

    4 slices tomato

    2 lettuce leaf

    6 slices cucumber

    1 tbsp lite mayo

    Black pepper, celery salt to taste

    Mix chicken with mayo and season to taste.  Heat pita a few seconds to soften a little, then fill each half with mixture.  Add lettuce, tomato, cucumber and enjoy.

    Cal 300, Fat 5.5g, Sat fat 0g, Cholesterol 40mg, Sodium 575mg, Carbs 32g, Fiber 3g, Sugar 6g, Protein 18g, Vit A 20%, C 23%, Calcium 5%, Iron 16%

    If you have a Chik-fil-a close by, treat yourself to a  Chargrilled Chicken sandwich with a side salad with fat free honey mustard dressing - only  435 cal, 6.5g fat.

    I am a teacher and only have 35 min. for lunch. I have to bring my lunch and cook in a microwave. I hate all frozen dinners, but I have a foodsaver. I make extra food when I cook and just seal it up. The bonus is the food doesn't taste microwaved and I know what's in it. It is wonderful!

    I will often have a sandwich, carrots and yogurt or grapefruit cup.

    You can put really whatever kind of meat you want on it, turkey, ham, etc. Light mayo or mustard, slice of tomato, put it on wheat or rye and you're set!

    You can also make chicken salad the night before and have a couple days worth of lunch. Just use fat free yogurt and less light mayo. Great on a bagel!

    Maybe a BLT with turkey bacon or leftovers from your fantastic, fun meal the night before!

    You can also buy turkey burgers and have a quick burger!

    I have the exact same issue. I am home everyday at lunch but only for a short time. I have been trying to "set up" my lunch the night before so I can just go home and  have it. I have done everything from leftvovers to salads with chicken or tuna, soup, and wraps.  I find it easier if it is done and ready to go.  (I also do not eat prepackaged foods, homecook all meals for me and my family and prefer cooking or grilling to going to a restaurant.) I do sometimes make an eggwhite omelet with the leftover asparagus or broccoli - and a piece of toast. That cooks up pretty quickly and is quite filling, believe it or not.

    Thats funny, I just posted a message needing help with the exact same issue. What is it about lunch that is such a huge pain! *sigh*

    I am trying to put together some ideas to keep lunch simple (REALLY simple) and satisfying. I too dislike packaged foods. Some of the lunch ideas that have been successful for me in the past have been Hummus w/pita, cottage cheese w/fruit, bean/taco meat w/chips, smoothies, bean burrito, spaghetti (cooked and packaged specifically for my lunches-extra tomato, mushies, pre-portioned) I also purchased a sandwich griller to make things more "interesting" but I have to admt I am not motivated enough to use it- thats just me... I'd love to hear your ideas too- maybe we can work on it together :)
