    moist broiled chikken??? That's impossible:)

    There is a restaurant called zoe's kitchen and I am determined to discover how to replicate their seasoning blend that they marinate their chikken in! this is not so much close but still delicious!

    2 Chicken Breasts-boneless, skinless

    a small palmfull of salt/pepper

    a small palmfull of herbs de provence(a seasoning blend) and the most expensive thing in this:)

    maybe 2 tblsp of olive oil

    defrost the chicken, rinse in cool water and dry on papers towels

    mix the salt, pepper, and herbs de provence together with a little olive oil

    rub onto chicken and drizzle with a little olive oil and squeeze some fresh lime juice over top

    broil in oven for about 10 minutes per side-not the top shelf in oven, the next on down

    flip after the first ten minutes(no need to season other side)

    the chicken should nicley golden brown and juices run clear-very moist inside! 

    check with meat thermometer and eat!

    As a side dish I prepared a couscous salad w/ roma tomatoes(2) sliced into small wedges, and 1/2 cucumber sliced very thinly, lime juice(a couple go arounds), garlic(2 tblsp minced), salt and pepper.
