Here's my take on Strawberry Shortcake:
1 Angel food cake (your choice - I get the square one - looks like pound cake)
Cool Whip Free
Polaner's Sugar Free Strawberry preserves

First off, I like getting the pound cake style angel cake because I can cut and prepare only what I an going to eat at the moment...
Cut 2 slices of angel food cake - about 1/2 inch thick (this is actually less then a serving amount)
Thaw about 4 strawberries and slice them, the mix with 2 tablespoons strawberry preserves.
Spread 1 tablespoon of whipped topping on one slice of cake, then spread 1 tablespoon strawberry mix.
Take second slice of cake and spread whipped topping. Place on top of first slice then continue with the rest of the toppings.
Enjoy!
You can substitute cool whip with fat free vanilla pudding mix. You can also add thin slices of banana for an extra treat!
