    orphan vegetables: jicama

    Hicca-what…jicama.  This lonely vegetable is shaped like a big brown turnip, it has a texture like a radish, and tastes slightly sweet.  It loves to be peeled and eaten raw but will tolerate being thrown in salads and slaws.  With only 45 calories in a cup won’t you give this vegetable a loving home in your next meal?

    I love this veggie! One of our favorite things to do with it is season it with fry type seasonings and eat them raw! Oh so good, you hardly miss french fries!
