    Re: Pineapple cake

I'm new to this, my daughter and I are both on the program and are looking for low-cal, low-fat eating ideas.  I love pineapple cake and until now I thought cake would be off limits for me.  I am going to try this with my Sunday dinner and see what my husband thinks.  He is always telling me you're on a diet you can't eat this or that.  Now I want to see what he has to say.  I love it when I can fool him with something delicious that he thinks I can't have.  He believes this myth that anything that tastes good can't be good for your diet.  Thanks a lot.

    Re: Pineapple cake

I made it and took it to a family reunion.  Nobody could believe it was low fat, only two ingredients and tasted so good.  One of my new favorites.  Spoon a little FF pudding on top and it is even better!!

No you don't need to add water to it, I have made it several times now and it has turned out great for me each time.  What didn't you like?  Was it dry, or not sweet enough or just taste funny?  What mix did you use?  I have even tried it with a homemade soy and whole wheat flour recipe and it was good.  Topping makes a difference too.

    Re: Pineapple cake

You have it. You just mix dry angel food mix with 1 can pineapple with juice. Follow the directions on the box to mix & bake. DO NOT add any ingredients (ie eggs, water, etc) except the canned pinapple.

    Re: Pineapple cake

An absolute treat!  I have made this twice now and it is so fulfilling!  A great alternative for people who love pineapple upside-down cake (like me).

One question:  does anyone have the the total carbs for a serving?  I'm bad at math, and plus I threw away the packages again before getting the info  :-0

    Re: Pineapple cake

I also want to add that even though it is FAT FREE, it is not CARB FREE and therefore slows down your progress if you eat too much.  I found that making only 1/2 the package of angel food cake mix with one of the small cans of crushed pineapple in an 8x8 pan works better for me ... less available if I get weak ;-) .....
