I hope you like the jello salad. I had another version today using the sugar-free jello and fat free cottage cheese with green grapes on the side (I had used all my cool-whip on strawberries).
To make it easy to take to work with you, try using the single serve sugar-free jello containers, fruit in single serve containers, and pack some fat-free or low-fat cottage cheese. It seems I have seen individual containers of cottage cheese somewhere in the stores.
Let me know what you come up with.
