    Mexican fare

    I have a recipe with black beans, canned corn, green onions, fresh tomatoes and cilantro that I mix together and it's ready to eat.  How do I figure out what a serving is and also how do I calculate the calories/fat grams so I'm not overindulging?  Any help would be much appreciated.

     Just finished my first week and lost 2 lbs.  Yay!!

    Use the calorie and fat information on the label of the cans, and the tomato from the alli Calorie Counter (or www.calorieking.com).  Add that all up.  Then measure out how many cups the total recipe yields.

    Divide the number of cups into the total calories and fat.  Record the calories and fat from how ever many cups you actually eat.  Sounds yummy!

    Congrats on the 2 pounds; that's great!!!

     those ingredients on their own don't sound like there would be much fat in them. it' sounds great. when i make something, i add every ingredient individually to the nutrition log and since it doesnt always give you the options you want - like a tablespoon versus a cup (this is annoying and tedious) i have two options, i could go to another source like calorieking.com and look them up and input them as new foods- or, i could estimate, if i add 2-3 tbs i call it 1/8 of a cup. i am lazy so i do the latter : )

    the only things i worry strictly about are the foods high in fat. a few too many calories of plain beans or tomatoes isn't going to matter as much to your weight loss and the potential for TEs as a few too many servings of cheese. that's my take on it, and i've lost 60 lbs on alli.

    All right, gang.  By popular demand :-) here is my black bean salad recipe.  Enjoy

    Black Bean Salad

    1 can black beans (I use either Progresso or Bush)

    1 8 oz can whole kernel corn

    1 bunch scallions

    1/2 cup fresh cilantro

    fresh jalapeno pepper (optional)

    juice from one fresh lime

    Mix all ingredients together and enjoy with tortilla chips or as a side dish. 

    (I sometimes have this for lunch.  Great protein and minimal or no fat)!!  I've talked with some people who put some kind of a dressing on this but I don't think it needs anything.

    Down 12 lbs since April.  Yippee!
