I don't do much cooking either, so I've got lost of ideas.
My favorite meal is 2 fish filets (Gorton's Broiled Talipia with Butter and Garlic - they also have a Lemon Pepper flavor), 3/4 cup rice (1/2 cup dry) mixed with a tbsp of lite soy sauce, and a canned veggie.
At Wal-Mart I bought Ling Ling's Chicken and Veggie Potstickers (basically chicken and veggies wrapped in a pasta shell. All you do is boil them. Again I have em with rice and a veggie. They come with a packet of soy sauce for dipping, but I use my own lite soy sauce. Mmm, very yummy.
Chicken patties were always a weakness for me. So I descoved Morning Star meatless chicken patties. They certainly aren't as tasty as the real thing, but they are pretty good, and have half the fat and cals. They are microwavable. I usually have one patty in a sandwich with lite italian bread, a small smear of low fat mayo (or miracle whip) with some lettuce and a slice of fat free cheddar cheese. Then I have some veggies and a handful of Baked Layz chips.
Tonight I boiled a serving of frozen spinach and cheese ravioli, then microwaved a little marinara sauce for dipping, then had it with some green beans and rice.
