    Frozen Prepacked and QUICK

    Help!  I don't mind fixing dinners from scratch most of the time but life just gets overwhelming you know?  I want to be able to still eat well without getting stressed out about it.  If anyone has any dinner ideas with minimal chopping of veggies or utilizing frozen or prepacked foods I would be eternally grateful!

    Have you checked out the frozen veggie section - you can get veggies already chopped up for use in most any recipe.  You can also find fresh chopped veggies in a lot of produce areas - I have seen them at our local Kroger and Meijer store here in Ohio.  My daughter uses them quite often (helps out as she has arthritis in her hands as well as scleredoma)

    I also blanche (hopefully that is spelled correctly) fresh veggies when on sale (or out of my garden) and freeze them - something my mom always did (i.e., broccoli, cauliflower, zucchini (shredded zucchini can be used in casserole, breads, pancakes).

    Oh yes, I use lots of the prepackaged frozen veggies, as Sher said they are good, my favorite is the snow peas.  I have also started buying Wallmarts frozen wild Salmon fillets, they are already portioned and surprisingly without the skin.  The packaging is great, there is no hint of ever being froze and they don't smell up the house when cooked indoors.  The prepackaged and flavored hormel lean pork loin roast is very good and easy to pop in the oven.  The precooked grilled chicken is great to make fajita's, very fast.  I hope some of these ideas help and best of luck to you.

     I don't do much cooking either, so I've got lost of ideas.

    My favorite meal is 2 fish filets (Gorton's Broiled Talipia with Butter and Garlic - they also have a Lemon Pepper flavor), 3/4 cup rice (1/2 cup dry) mixed with a tbsp of lite soy sauce, and a canned veggie.

    At Wal-Mart I bought Ling Ling's Chicken and Veggie Potstickers (basically chicken and veggies wrapped in a pasta shell. All you do is boil them. Again I have em with rice and a veggie. They come with a packet of soy sauce for dipping, but I use my own lite soy sauce. Mmm, very yummy.

    Chicken patties were always a weakness for me. So I descoved Morning Star meatless chicken patties. They certainly aren't as tasty as the real thing, but they are pretty good, and have half the fat and cals. They are microwavable. I usually have one patty in a sandwich with lite italian bread, a small smear of low fat mayo (or miracle whip) with some lettuce and a slice of fat free cheddar cheese. Then I have some veggies and a handful of Baked Layz chips.

     Tonight I boiled a serving of frozen spinach and cheese ravioli, then microwaved a little marinara sauce for dipping, then had it with some green beans and rice.
