    Cheesecake

    One of my favorite snack to make when I need something sweet is what I call my CHEESECAKE FIX.

    1 Fat-Free Graham Craker

    2 Tbsp. Fat-Free Cream Cheese

    Slices of Strawberries

    Spread cream cheese on craker and top with strawberries. For a sweeter taste, sprinkle with Sweet-N-Low.   I also love to top it with Blackberries.

    About 110 Cal.

    you know you can also use low fat vanilla wafers and instead of sweet-n-low use splenda mixed with the fat free cream cheese and 1/4 cup of egg beaters and bake them as cupcakes then top them with your favorite fruits

    This sounds real good I just need more info. on how you make them> what do you do with the wafers, how much cream cheese, how much splenda, and how long do you bake them and at what temp.................

    i love that idea!  recently told the kids they could choose a food to help me make one day this week and my daughter chose cheesecake. i think we'll be making cheesecake cupcakes!

    Ingredients:

    Vanilla Wafers

    1/4 cup egg beaters

    1 package of FF Cream Cheese

    1/2 cup of Splenda

    1 tsp of Vanilla

    Directions:

    Mix all ingredients in Bowl with beater.  Place wafers on bottom of cupcake papers and top with mixture.  Bake at 325 for 25 minutes.  Let cool then top with favorite fruit.  If you wish you can mix the fruit into the batter before you bake or use FF chocolate to make them chocolate cheesecake.

    Thank you I cant wait to try these. I'm going south for a month and am taking a few recipes with me so I can watch what I eat, and hope family will also like them.
