    BBQ Time!

    Hi!

     As the weather's getting nicer and it's lighter longer.. my husband and I use our outdoor BBQ a lot. I was wondering if anyone had some yummy and healthy ideas for using it! Tonight I think i'm going to try to grill some corn and chicken with BBQ sauce, but that's about as creative as I've gotten! : )

    Veggies grilled on the BBQ are wonderful!  Find a veggie grill basket (we got ours at Target) and slice up some bell peppers, onions, potatos, etc.  You can marinate them in a little light olive oil and Italian seasoning, or even some light Italian salad dressing. 

     Grilling fish is also yummy!

    This is so good that you won't believe it!

     Get 1 boneless, skinless chicken breast and pound it between 2 sheets of plastic wrap until about 1/2 inch thickness. Place it in a gallon zip-lock bag with 1/8 cup salt and 1/8 cup sugar and 2 cups of water.  Release air from bag, and leave in fridge for 30 minutes while grill is heating.  Pat dry.  Spray with olive oil or Pam,add freshly ground pepper, and grill, uncovered for just a few minute until done.

     If you've been really good, top with some blue cheese crumbles before serving.

     The chicken is so tender and moist that I get teary-eyed just writing about it, and it's low fat and very healthy.

    Honey-Beer Barbecue Sauce

    Honey-Beer Barbecue Sauce
    Ingredients
    1/3 cup chopped onion (1 small)
    1 clove garlic, minced
    1 Tbsp. cooking oil
    3/4 cup bottled chili sauce
    1/2 cup beer
    1/4 cup honey
    2 Tbsp. Worcestershire sauce
    1 Tbsp. yellow mustard
    Directions
    1. In a medium saucepan, cook onion and garlic in hot oil over medium
    heat until onion is tender. Stir in chili sauce, beer, honey,
    Worcestershire sauce, and mustard. Bring to boiling; reduce heat.
    Simmer, uncovered, about 20 minutes or until desired consistency,
    stirring occasionally.
    2. To use, brush chicken with some of the sauce during the last 10
    minutes of grilling. If desired, heat any remaining sauce until bubbly
    and pass with chicken. Makes 12 (2 tablespoon servings).

     Something our family loves:   get a large piece of foil. Place in it sliced up zuchini, squash, red & green peppers, onion and any other fresh veggies you love. I spray lightly with olive oil and sprinkle on ms. dash, pepper, &garlic. Fold foil around them and fold shut. It should make a bag, tube, square - whichever shape fits your grill- we have a small upper shelf on our grill so I make a long flat tube out of mine. Done in 20-30min on the grill checking frequantly to make sure they are not scorching depending on how hot your grill is.  It has become a fun way to incoorperate new veggies in our mealplan.
