Ingredients:
1 pound of extra lean ground turkey
1 packet of taco seasoning
1 can of black beans
1 pre-portioned microwavable cups of brown rice (its about 1 cup of cooked rice, so you may try other brown rices as well!)
1 cup of reduced fat shredded cheddar cheese
1.5 cups of crushed baked tostito scoops
Preperation:
Preheat your oven to 450. Brown the ground turkey in a large pan til fully cooked and drain if neccessary (it is extra lean, so you shouldn't have to drain anything). Add the taco seasoning to taste. Next add your COOKED rice to the pan. Drain the can of black beans and then add those to the pan ass well. Once everything is nice and hot, pour the mixture in a greased (I used Pam) 9 x 13 casserole dish. Sprinkle your cup of shredded cheddar over the top, then sprinkle the crushed baked tostitos over top of the cheddar. Place the casserole in the oven til the cheese has melted and the tostitos get crisp. I did not time this exactly, but it was about 10 minutes for me. Once the casserole is finished, allow it to cool for a few minutes. Then cut into six squares and serve!
This was really tasty for me since I love mexican food! I think next time I will make this I might add some corn and green chiles to the recipe! For such a nice portion the calories in this are quite low (I am on the 1400 cal/15 Fat g plan). So you might want to pair the casserole with a salad as well!
