    Mexican Casserole

    Ingredients: 

    1 pound of extra lean ground turkey

    1 packet of  taco seasoning

    1 can of black beans

    1 pre-portioned microwavable cups of brown rice (its about 1 cup of cooked rice, so you may try other brown rices as well!)

    1 cup of reduced fat shredded cheddar cheese

    1.5 cups of crushed baked tostito scoops

    Preperation:

    Preheat your oven to 450. Brown the ground turkey in a large pan til fully cooked and drain if neccessary (it is extra lean, so you shouldn't have to drain anything). Add the taco seasoning to taste. Next add your COOKED rice to the pan. Drain the can of black beans and then add those to the pan ass well. Once everything is nice and hot, pour the mixture in a greased (I used Pam) 9 x 13 casserole dish. Sprinkle your cup of shredded cheddar over the top, then sprinkle the crushed baked tostitos over top of the cheddar. Place the casserole in the oven til the cheese has melted and the tostitos get crisp. I did not time this exactly, but it was about 10 minutes for me. Once the casserole is finished, allow it to cool for a few minutes. Then cut into six squares and serve!

    This was really tasty for me since I love mexican food! I think next time I will make this I might add some corn and green chiles to the recipe! For such a nice portion the calories in this are quite low (I am on the 1400 cal/15 Fat g plan). So you might want to pair the casserole with a salad as well!

    This looks good!  I love any kind of mexican food.  I will definately give this one a try.

    Thanks for posting this receipe! I made it for dinner last night and it was wonderful! We even had enough left over for me to take some with me to work for lunch. Yummy.

    Hi  - I just started back on alli and was looking for a few recipes. This sounds really good. I too love Mexican food so this will be my new answer! Thanks:)

    I made this last night & I LOVED it!! I didn't use brown rice though. I used Lipton Fiesta Sides..the Mexican Rice one. It's only 1 gram of fat for 1/2 cup! It made enough for dinner last night for my hubby & I & lunch for me today! : )

    Thank you so much for this recipe.  I just made it and it is fantastic!!  I added a little shredded lettuce, chopped tomato and a tablespoon of FF sour cream to the top.  Wonderful!

    Hi - I wrote a post previously saying that your recipe sounded really good. Last night i made it - now I'm writing to say.....GREAT dish! Thanks for the recipe. I will try it with corn too or even chopped tomatoes. So this one is a winner.! -Michelle

    I made this for lunch yesterday and it was great.  I will add this to my recipe list of things to make on a regular basis.

     Wow - I made the Mexican casserole this evening and it was really really good.  I have never used ground turkey so this was a first for me.   It has gone into my 'recipe file'

     Glad you guys enjoyed it..  It is super good if you make a taco salad out of it too by adding some shredded lettuce and salsa!
