    Help with menus for camping trip

    I need some Help!  I have posted this on other threads hoping to get a response and as yet, have not heard from anyone.  I am hoping that someone will be able to help me out?  We are planning  a camping trip the first of July and I desperately need some camping menu ideas.  Being a camper since childhood has not helped me with any menu ideas as my mom would fix bacon & eggs for breakfast, p-nut-butter sandwiches for lunch and hotdogs or hamburgers for dinner.  I would like to have something that has a better variety and is healthier not to mention easy enough to prepare at a campsite!  Give me your best - please!  Thanks a bunch!

     For breakfast, try some fruit, bran muffins, & orange juice, you can also easily take egg substitute for scrambled eggs, and some pre-chopped vegetables (bell pepper, mushroomm onion, spinach, etc) for a more nutritious breakfast.  also take some turkey bacon.

    For Lunch, make simple sandwiches with deli turkey or lean ham, reduced fat cheese, mustard and light mayo, can all go into wheat pita breads.  Bring along a bag of baked chips and some cut vegies with light ranch dressing for dipping.

     For dinner you can probably grill all kinds of great things, such as chicken (use a chicken grilling season blend, 1/4 cup red wine vinegar, 2 tbs tomato paste, & 2 tbs honey, combine all ingredients together, and marinate the chicken for about an hour, then grill over goals turning as needed until chicken is done), fish, and serve fat-free hot dogs, and turkey burgers with fat free cheese, light mayo etc.  Also grilling some vegies is a great idea as well.  

    For snacking: bring fresh fruit, lowfat yogurt, and you can even pre-pop some fat-free microwave popcorn and store in ziploc bags.

    I think if you type "camping food" into the search engine you might come up with more!  Here's some ideas that i've posted before.

    We tent camp and I have a very small barbecue and one burner to work with.... and I'm usually feeding alot of people.  Here's some ideas that I've done in the past that I think would work on the plan:

    Hobo dinner-Slice potatoes, carrots, onions, place on a piece of square aluminum foil top with salt, pepper, and spray butter (any other veggies you want can be added as well as any other seasonings, like ff italian dressing) bring all corners of foil up to a point and seal.  Place right on the coals of your campfire.  Depending on how hot your fire is it can be done in 20min to an hour.

    Corn on the cob-using the same theory as hobo dinner.  i bring already shucked corn spray with spray butter salt & pepper wrap in foil and place on coals.

    Fish-  again same concept take your fish put on foil top with onion, and lemon slices, toss on fire and cook

    Watermellon- I cut watermellon into cubes and double bag in gallon size bags and toss in the cooler.  It's a quick snack while camping.

    Don't forget the spray butter and pack plenty of bottled water :)

    I posted a similar thread a while back. Here are a few ideas (in no particular order)

    Breakfast : egg whites, turkey bacon, hash browns (use Pam), muffins, no fat cream cheese & lofat bagel, fresh fruit

    Lunch/Dinner : turkey burgers/turkey dogs, fat free hot dogs, lofat peanut butter, grilled fish, grilled veggies, fat free baked beans, boneless/skinless chicken,

    I also picked up a low fat cookbook at a used bookstore. It gave me lots of ideas.

    All my ideas that came to mind are already posted. However, don't forget to pack fresh fruits and vegetables to take with you. Dole makes single packs of fruit now that stay fresh. They are individual sizes too!!! Have fun camping!
