Grilling sounds safe, but isn't necessarily. They need fat to keep the meat from sticking to the grill and that's probably where at least some of the fat in the chicken sandwich comes from. Was the bun toasted or grilled? If so, there might have been some fat on that.
The cinnamon apples weren't raw apples, they were cooked. I'll bet anything they were sauteed. That takes plenty of fat.
Fat is a flavor carrier. It's why the food at these places tastes good.
