I found a new sugar substitute at Walmart called "Clabber Girl" it is a blend for baking and is very good without any aftertaste. I made this cheesecake with it and it was fabulous. It has a cherry inside layer, with a baked bottom layer and no bake top layer. It looks pretty too. Can use any kind of fruit you like. The entire cheesecake has 6 g fat (all from the crust)

Ingredients
FF Cream Cheese - 1 block softened
FF cottage Cheese - 1 cup pureed in blender
Egg substitute - 1/4 cup
Sugar Free Instant pudding mix - Cheesecake, French vanilla, or vanilla flavor - one small box
Cool whip free - 1 cup
Cherry pie filling, sugar free - 1 can
Sugar replacement - 3/4 cup
Vanilla flavoring and lemon juice - 1/2 tsp each.
Crust - you can make your own reduced fat graham cracker or other favorite or buy a ready made. You will need to adjust calories if not using a reduced fat.
Cream the cream cheese with a mixer and put cottage cheese in the blender until smooth. Add the pureed cottage cheese to cream cheese, put in sugar substitute, egg beater and flavorings. Pour on crust and bake in water bath (shallow pan with 1/2 to 1 inch of water) for 30-35 minutes. Turn off oven and let cool for about 20 minutes. Mix together milk and pudding mix. Fold in cool whip.
Spread the cherry pie filling over cheesecake. Spread the pudding mixture over cherries and refrigerate.
