    Tripple Layer Cheesecake fat free / sugar free

    I found a new sugar substitute at Walmart called "Clabber Girl"  it is a blend for baking and is very good without any aftertaste.  I made this cheesecake with it and it was fabulous.  It has a cherry inside layer, with a baked bottom layer and no bake top layer.  It looks pretty too.  Can use any kind of fruit you like.  The entire cheesecake has 6 g fat (all from the crust)

    Servings 10 

    Calories 95 / sodium 387 / carbs 14 / protein 7 / calcium 14 / iron 2 / fat 0.6

    Ingredients

    FF Cream Cheese - 1 block softened

    FF cottage Cheese - 1 cup pureed in blender

    Egg substitute - 1/4 cup

    Sugar Free Instant pudding mix - Cheesecake, French vanilla, or vanilla flavor - one small box

    Cool whip free - 1 cup

    Cherry pie filling, sugar free - 1 can

    Sugar replacement - 3/4 cup

    Vanilla flavoring and lemon juice - 1/2 tsp each.

    Crust - you can make your own reduced fat graham cracker or other favorite or buy a ready made.  You will need to adjust calories if not using a reduced fat.

    Cream the cream cheese with a mixer and put cottage cheese in the blender until smooth.  Add the pureed cottage cheese to cream cheese, put in sugar substitute, egg beater and flavorings.  Pour on crust and bake in water bath (shallow pan with 1/2 to 1 inch of water) for 30-35 minutes.  Turn off oven and let cool for about 20 minutes.  Mix together milk and pudding mix.  Fold in cool whip.
    Spread the cherry pie filling over cheesecake.  Spread the pudding mixture over cherries and refrigerate.

    omg this sounds soooo yummy...question for you tho, in the directions you mention milk but there is no milk listed on the ingredient list....how much milk do you mix with the pudding mix? Thx, Jennifer

    So sorry!  I mix one cup of skim milk with the pudding then add the coolwhip.

    Wow, I must have been having a bad one the day I posted the recipe.  Yes, 350 degrees.  Hope you like it.

    OMG, This cake was freaking awesome!...I couldnt find Clabbergirl but I made it with Splenda....definitely did taste a bit of an aftertaste with the Splenda. With all the ingredients combined and the texture, you almost feel guilty to eat this cake. Let me tell u, I am addicted! It tastes soooo good...Thanks so much 4 sharing this recipe.

    Glad you liked it!  This along with the pineapple cake are my 2 favorite desserts.  If you wanted to add about 1/4 cup of sugar and the rest splenda the aftertaste is pretty much eliminated.  That is what I do around the holidays, that way I can say "no it has sugar in it" and then secretly tell the dieters that it is OK!

     Ah I just posted looking for a cheesecake recipe since I have been craving some and my attempt at a new recipe flopped. I will be trying ths asap and man o man does it sound good!
