    My Favorite Breakfast Scramble

    I usually only have time to do this on the weekend but I'm addicted!!! I've even had it for supper!

    1 serving JC Potter Lite Sausage (2 oz.), cooked, diced

    1/2 cup egg substitute (equivalent to 2 eggs) (can't really tell the difference between this and "real" eggs by the time I get it "doctored" up!

    red onion, chopped (use  however much you like)

    red bell pepper, chopped (use however much you like--I like about a 1/4 of a pepper)

    chopped tomatoes (use however much you like)

    1 serving reduced fat colby jack shredded cheese (1/4 cup)

     Cook the sausage and set aside. Saute vegetables in small skillet with cooking spray. When vegetable are cooked to your liking, add egg substitute, When egg is semi-cooked, add sausage and scramble mixture. Just before removing from the skillet, fold in cheese. This is sooooo yummy topped with picante sauce! I usually eat it either by itself or with 1 or 2 Mission brand extra thin corn tortillas (2 = 1 serving for 80 calories and 1 gram of fat!!!!).

    Mmmm...I'm already planning my Saturday breakfast!!

    I tried that today with a crushed garlic clove. Good stuff....

    I didn't even think about adding garlic...however sometimes I sprinkle a little ground cumin in it...and that's tasty too. Most of the time I get "carried away" with the chopped veggies and before I know it I have a huge pan full...and I eat it all because it's healthy with the veggies! Yummmmmmyyy!!!

    This sounds great!  Where are you finding low fat cheese?  All I see here is no fat tofu processed stuff that I'm not up to trying.

    I use either Sargento Light Mexican or Kraft 2% Colby-Jack. I can get either of these at Wal-Mart Supercenter.

    OK, thanks.  Maybe I'm being too hard on myself.  I look at the fat grams on food which is labeled "light" and think it's off the charts sometimes.  Maybe I need to focus more on fat grams per meal instead of what's in just one item.
