    Mashed Potato Substitute

    Cook 1 bag frozen cauliflower until very soft. Drain well. Add fat free half & half, salt & pepper to taste, and mix with mixer until smooth. For added taste you can add low fat shredded cheese.

    this sounds great. Do you have an estimate of what a 1/2 cup serving would be w/o the half and half ?

     I use regular potatoes but, only mash them with low-fat and sodium chicken broth. ( no butter or milk.)

     I do that too, Clarence.  Red potatoes, skin on, a splash of chicken broth, and then fresh parsley. 

    I also like mashed cauliflower but it tends to be watery.  So after draining, I put it back on the heat for a minute or two to evaporate some of that.  Shred a little parm over it, and again, some kind of fresh herb.  Very good!  Land O Lakes makes a pretty darned good fat free 1/2 1/2 if you want to have some creaminess.

    And how about spaghetti squash or half red potatoes, half rutabega. 

    There are so many ways to get that mashed potato feeling without the fat!
