    Dinner Help!

     Hey, I need some recipe ideas.  I love veggies and use a lot of greens in my food.  However, I am living with my boyfriend now and he does not eat them.  I can not make him eat anything green at all.  I pour fiber in all of his food so at least he is getting something.  However, I want to cook healthy but I also want to cook something he'll eat.  Any suggestions?

    Hi,

    i also live with my boyfriend and he can be a picky eater (don't tell him that! ha) but i have found that making things that require toppings can be helpful.  So i make chicken fajitas (sp?) so just marinate the chix breast in lime with some cilantro, cumin, salt, pepper and garlic.  I let that sit however long i have.  And i cook down some bell peppers and onions, seperately or together in a non-stick pan using pam spray.  I get a bunch of little bowls out and cut up tomatoes, romaine lettuce, spinach (uncooked), fat free black bean dip (which i make, really easy), salsa, fat free sour cream, low fat shredded cheese.  I usually steam some brocoli to go along put and some low sodium teryaki (sp?) sauce on it.  You can get whole wheat or whole grain wraps for pretty cheap so it all works out well. 

     I also make chicken with roasted red peppers (roast yourself or rinse the ones stored in oil in water before using), artichoke hearts, mushrooms with a really light white wine and chicken stock sauce, over brown rice or low fat pasta.

     Thank you for the recipe ideas.  It is such a pain cooking for him sometimes, haha.  I can't stand his cooking though so I will just have to tough it out for the sake of my taste buds.

    Your chicken fajitas sound really good.  My question is how do you make your black bean dip?

    Ingredients*

    1 (15-ounce) can black beans, rinsed and drained
    ½ cup tomato (you can use grated carrot)                                                                                         

    ½ cup red bell pepper finely chopped
    1/4 cup fresh lime juice (about 2 limes)
    1/4 cup finely chopped green onions
    1/4 cup chopped fresh cilantro (when I first made the recipe I always used cilantro but some people really hate it, so I don’t add it as much anymore, tastes really good without it)
    1/2 teaspoon minced garlic
    1/8 teaspoon salt
    1/8 teaspoon ground red pepper                                                                                                             

    ½ teaspoon to a teaspoon of Sriracha (a crushed red pepper paste/sauce that is common in Vietnamese food, you can get it at any supermarket in the Asian section. It’s red and in a squeeze bottle with a rooster on it and a green top.)Sriracha is a lifesaver, it has an honestly good taste and is very spicy so I add it to a lot of things especially sandwiches, anything bbq’d and as a dipping sauce for meats.  Great on the fajitas as well!

    Prep:

    Place beans in a food processor, and pulse until almost smooth. Combine the beans, and the remaining ingredients in a medium bowl, stirring until well blended. Let stand 30 minutes, if you can stand it!If you go with a 2 tablespoon serving size the dip has about 21 calories and  ~0.2 g fat * you can go up or down with any of the amounts, I only even have measurements because my friend wanted the recipe and so I made it with measuring, I usually just do what I think looks right

     Wondering what it is that your boyfriend does like?  Maybe if you'll tell us about some of his horrible cooking :-) someone can suggest ways to health it up while still giving him the flavors he likes?
