    Crispy Baked Chicken

    I HATE baked chicken. I mean I can't stand it.  The only way I would eat it would be if I were starving to death and then I'd have to think about it. One of my best friends knows this very well but she tricked me!  She invited me over for dinner and served this wonderful, crispy chicken that I just loved.  I had to have the recipe and when she gave it to me, I nearly fell out of my chair. Not only was it baked but it was so simple.  I thought I'd share it with you. Normally I don't leave skin on my chicken, but with this....well, you can cook it either way but the skin is so good when it's cooked like this. Not to mention that you can leave off the crispy if you take the skin off.  We used a grill pan cast iron skillet, but you can always make do with a regular pan. I don't think you'll get the same crispiness and a bit more fat, though.

    Ingredients

    4 chicken breasts, well rinsed

    olive oil

    Emeril's Essense a.k.a BAM!

    hungry people. LOL

    First pre heat your oven to 350 degrees. Take a little olive oil in your hand and rub it into the chicken.  You just want enough to make it moist, so don't go crazy with the oil.  Coat chicken with BAM! You can roll it in it if you like, I just put some in my hand and patted it on.  Place chicken in grill pan. Place in oven and let it bake an hour to an hour and a half.  If you left the skin on the chicken will come out crispy. It's soooo good. I hope you all enjoy it.

    and I'm the opposite - i LOVE chicken :)  :)   I gave my cast iron skillets to my daughter-in-law, I may have to ask for one back !!!   So is this BAM spicy ???  I don't like/do spicy haha

     Um....yes and no. LOL.  It has a small kick to it, but it's more savory that hot. I admit I love spicy foods but it doesn't even register on my hot o' meter. Still, my advice to you would be to taste a little BAM! on your finger first.  I wouldn't want you to make it then not get to enjoy it. Try some of the larger supermarkets. Every now and again they have sample packs.

     Or you could make your own "Bam".  Here's what is in it:

    You fearless bammers out there can kick this up a notch by adding cayenne, to taste. (I'd start with about 1/4 teaspoon, and then take it from there.)

    3 tablespoons paprika
    2 tablespoons salt
    2 tablespoons dried parsley
    2 teaspoons onion powder
    2 teaspoons garlic powder
    1 teaspoon ground black pepper
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1 teaspoon dried thyme
    1/2 teaspoon celery salt

    It doesn't get hot until you start adding cayenne.
