    South of the Border tortilla snack or meal.

    Today I wanted something a bit different for lunch, so I took 2 plain corn tortillas (the ones I used were 80 calories for two, 1 g fat each), and sandwiched a piece of Pepper Jack cheese between them.  I used the full fat cheese, but it was 6 g of fat so it fit in.  I baked it in my toaster oven till the cheese melted, then folded it and put some salsa in the middle.  It was really tasty and since I used what was handy, it was convenient.  I also had a lettuce salad with viinegar, an apple sliced with a sprinkle of sugar and cinnamon, and 3 turkey meatballs over 1 cup of white rice.  Sounds like a lot of food, but I am stuffed and still under the 600 calories and 19 g of fat I am allowed at lunch.  Sweet!

     Sounds yummy!  I will give it a try.  I'm always looking for mexican recipes as I could eat mexican foods everyday!
