    Breakfast or Lunch for Dinner

     The hardest meal for me is dinner.  The ingredients list is generally longer than breakfast or lunch recipes and so far, I haven't gotten the knack of using up all of the bits and pieces.  I'm not having the same trouble with the breakfast and lunch recipes.  So last night, I had this "ah ha" moment and decided to have a breakfast item for dinner.  Doing this allows you extra calories and fat grams to spend on the meal, like perhaps an extra slice of turkey bacon on the BLT, or a piece of toast or small potato.  I haven't worked this idea into the nutrition log yet to make sure I'm not shorting myself on some kind of nutrient.  If anyone's done the same, let me know if you have run into any hitches.

     Hi Mary,

    I also have had breakfast for dinner.  My husband wasn't home tonight so instead of cooking I had frozen whole wheat waffles with margarine (I use the brummel type that is made with yogurt), slivered almonds and lite syrup, 2 pieces of turkey bacon and 4oz of diet cranberry juice.  It is a treat not to have to cook, and this meal is quick and easy.  I have also had Kashi almond flax cereal, 8 oz skim milk and a whole wheat English muffin with peanut butter and jelly.

     Thank you Pam.  Whether my husband is home or not at dinner time, I've already resigned myself to cooking X for him and Y for me.   I see you've already thought out the breakfast/lunch substitution for dinner with exactly the kind of additions I've been thinking would round out the meal.  I really appreciate your suggestions and will incorporate those.
