Will you share your tuna casserole recipe? I'm not having trouble with tuna at all and love the stuff. I'd sure like to have something I could make in a batch and freeze in portions for later on.
Sure! This is an adaptation of my Grammie's recipe - she made it all the time when I was little for me. It is one of my favorites.
1 C onion, chopped
equal amount celery, chopped
cooking spray or oil
8 oz package egg noodles
2T flour
1 1/2 - 2 C 2% or non-fat milk
2 cans tuna in water, undrained
salt
pepper
parsley
pimento
shredded reduced fat sharp cheddar
Saute veggies in oil or cooking spray until tender. Meanwhile, begin cooking the noodles according to package directions. Sprinkle veggies with flour and stir until coated. Cook briefly. Stir milk in very slowly, a little at a time, to make a thick sauce. Bring to a simmer, reduce heat. When mixture has thickened slightly, add tuna. Cook until thickened again, seasoning with salt, pepper, and parsley as desired. When sauce is desired thickness, add pimento (optional) for color.
Serve over egg noodles with a little cheese.
Note: This recipe is excellent with 1-2T prepared horseradish or as a casserole. Simply put the noodles into a Pam-sprayed casserole dish, top with sauce. Sprinkle with bread crumbs and cheese and bake until heated thru @ 350, about half an hour or so.
