     I think you gals are right. I had my version of tuna noodle casserole (not baked, no cheese or bread crumbs, made with skim milk, etc) and it was a nightmare the other night. Maybe it IS the tuna?

    The tuna I have: Bumble Bee Chunk Light in water

    2.5 servings per can

    0.5g fat, 60 calories, 13g protein per serving

    The recipe called for 2 cans, and I sat down and figured out that the whole pot of sauce had 55g fat and 1193 calories. Sounds like a lot, yes, but this is at least 4-6 servings of sauce, which would make it somewhere between 9 and 14g fat per serving, which isn't bad.

    I had that and some steamed broccoli and it was not a good situation... But you're also talking to the girl who didn't even take Alli with her lunch, had chicken fajitas (and requested as little oil in the cooking as possible) with no tortilla or guac or chips or cheese or beans or rice or anything delicious yet still managed to have TEs all afternoon today. No fair!!

     Hi Renea,

    I don't have any regular Hellmans' around now to look, but I'd bet it's twice the fat.  Maybe enough to make TUNA=BAD!

     Hi Helen,

    Adding brocolli to the equation brought back unpleasant memories of the first time I tried the Broccoli Mac & Cheese recipe.  This is a dish I really like, so thought I'd make a double batch and have it again the next day.  Being brand new at the time, I followed the instructions exactly.  Instructions say to put raw mac in the cheese sauce.  I did that with trepidation.  Then I had to add a whole lot more milk to get it to have the texture of something better than wallpaper paste.  Ended up with way more than two servings, because by the time the sauce thinned out enough, the mac got really plump.  It wasn't pretty at 9PM at my house.

    Will you share your tuna casserole recipe?  I'm not having trouble with tuna at all and love the stuff.  I'd sure like to have something I could make in a batch and freeze in portions for later on.

    Regular Hellmans has 10g of fat and the light is 1/2 of that. I don't use a lot at all though. I had some again last night and surprisingly I was fine. However 10g of fat is a lot. I will try the light or just eat tuna by itself.

    Sure! This is an adaptation of my Grammie's recipe - she made it all the time when I was little for me. It is one of my favorites.

    1 C onion, chopped
    equal amount celery, chopped
    cooking spray or oil
    8 oz package egg noodles
    2T flour
    1 1/2 - 2 C 2% or non-fat milk
    2 cans tuna in water, undrained
    salt
    pepper
    parsley
    pimento
    shredded reduced fat sharp cheddar

    Saute veggies in oil or cooking spray until tender. Meanwhile, begin cooking the noodles according to package directions. Sprinkle veggies with flour and stir until coated. Cook briefly. Stir milk in very slowly, a little at a time, to make a thick sauce. Bring to a simmer, reduce heat. When mixture has thickened slightly, add tuna. Cook until thickened again, seasoning with salt, pepper, and parsley as desired. When sauce is desired thickness, add pimento (optional) for color.

    Serve over egg noodles with a little cheese.

    Note: This recipe is excellent with 1-2T prepared horseradish or as a casserole. Simply put the noodles into a Pam-sprayed casserole dish, top with sauce. Sprinkle with bread crumbs and cheese and bake until heated thru @ 350, about half an hour or so.

    I don't have the recipe card with me here @ the office but I think this is basically it. Enjoy!!

     I really think it is the tuna - I have Bumblebee- per serving:

    Cal 60

    Fat .5g

    And then 1 tsp of regular mayo.. then I had the tuna with NO Mayo... It wasn't pretty and I was at the office.

     Wow, I'm sorry if you have to take tuna off your menu, JD.  I'm not having problems with it at all. Going to try Helen's tuna casserole recipe this weekend.  Sounds great!  I'll surely let you know if it is bothersome.

     Yeah - her receipe DOES sound good - I am going to try it (especially if it is at night).  I will try it and hopefully I won't have the other reactions I have had with tuna so far.  I will let you know!

    Also realizied that I am suddenly "COPPER" - LOL.  What is that anyway- does it have to do with how many posts you have?

    I am buying a new brand of tuna and see what happens- my issues arised with Bumblebee and so did the other lady's issue...  Nothing against Bumblebee...

    I will buy Chicken of the Sea and see what happens.  I love tuna and I can't see not eating it...

     Hi JD,

    Copper equates to the number of posts you've made.  Then there is silver, gold and platinum.  You're active.  Atta girl!

    I'm not one to bash anyone's favorite brands, but I read labels, read labels, read labels.  There could well be a difference in nutritonal info between brands.  I use Chicken of the Sea or even the Costco/Kirkland brand.  There is a brand called Giesha in my supermarket out west that is just as white and not funky/fatty looking when you open the can.  I buy what is affordable but also look at fat content before I put it in the cart.

     Girlees,

    I surely hope you enjoy the tuna recipe. Like I said, I have eaten it for so many years that we even have a different name for it: Toony Noonies. Guess I couldn't say it right when I was little! That should tell you something!

    It is one of my very favorite comfort foods and although I will admit it is better when butter and whole milk and cheese are involved, I can still get the jist of it with this revised recipe I came up with.

     No fair mentioning butter and cheese to me, Helen.  That is to me what your DH is to you when he offers you a taste of IC :-)  All week long I've been thinking about getting into the kitchen this weekend to experiment.  Just what could I add to fat free half and half to get it to whip?

    Can't wait to do your tuna recipe!

    There's a really great thread going in the 50's forum.  Lots of "old timers" participating in it.  We need to start one called Class of 2008 somewhere where all of us frequent.  This time next year we might be able to exchange some "maintenance recipes" instead of defatting everything.
