You then need to close it up as tight as you can with toothpicks. &lt;p&gt;I have yet another chicken recipe. You would think it&amp;#39;s all I eat. It&amp;#39;s just that I know it&amp;#39;s what a &lt;b&gt;lot &lt;/b&gt;of us eat, and I&amp;#39;m personally always trying to do something different with chicken so it doesn&amp;#39;t get unbearable.&lt;/p&gt;
&lt;p&gt;Roughly 410 cals and 6g of fat. Carbs are the sneaky one here, about 60 assuming you can only find noodles with 40-something grams of carbs. They&amp;#39;re more of just a filler, so if you want to leave them out or replace them with something you think will work, thats fine.&lt;br /&gt;&lt;span style="text-decoration:underline;"&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/span&gt;&lt;br /&gt;-HUNTS Mushroom Spaghetti Sauce*&amp;nbsp; &lt;br /&gt;&lt;i&gt;about 1 cup, 90cal 1g of fat&lt;/i&gt;&lt;br /&gt;-Fresh white mushrooms &lt;br /&gt;&lt;i&gt;about 3-4 large mushrooms diced in large chunks.&lt;/i&gt;&lt;br /&gt;-Red &amp;amp; Green Bell Pepper &lt;br /&gt;&lt;i&gt;about 2 tablespoons each, diced&lt;/i&gt;&lt;br /&gt;-Onion &lt;br /&gt;&lt;i&gt;about a teaspoon, diced&lt;/i&gt;&lt;br /&gt;-Pre-minced Garlic &lt;br /&gt;&lt;i&gt;about half a teaspoon&lt;/i&gt;&lt;br /&gt;-Med. I&amp;#39;m just pretty picky about it and this is the brand I found that isn&amp;#39;t too sweet or saltly.&lt;br /&gt;*Noodle nutrition varies, and you can use any type of noodle you like. I just had some spahgetti noodles I needed to get rid of. They have a lot of carbs, so if you want to use less than 2 ounces, that&amp;#39;s better.&lt;br /&gt;&lt;br /&gt;Cook noodles as package directs. Place thawed chicken in a non-stick pan lightly coated with olive oil spray. Season chicken to taste, both sides and cook until done.&lt;br /&gt;&lt;br /&gt;In a small pan add mushrooms, peppers, onion and garlic with a few sprays of olive oil and about a teaspoon and 1/2 of water. Place over med. heat, stirring frequantly at first to prevent sticking/burning until they start to steam well. Cook until mushrooms are softened, and then add spaghetti sauce. Bring to a light boil.&lt;br /&gt;&lt;br /&gt;Remove chicken from pan and cut into bite sized pieces, Optionally, also wipe the pan out. Combine sauce, noodles and chicken into the pan and evenly coat. You want more chicken and veggies than noodles and you want it all liberally covered, so add noodles in parts to make sure they wont thin it out too much. If you feel you need to, you can add some more sauce to the pan and re-heat.&lt;br /&gt;&lt;br /&gt;This is pretty low-fat and low-cal, so it leaves room for a little dessert if you wish, just remember the carb count in the noodles. Then for a side, I did half a bag of the uncle bens ready rice that goes in the microwave for 90 seconds. I go with the long grain/wild rice blend. Half a bag is 3g fat and 220 calories. And for desert, a jello pudding cup of the sugar free boston cream pie. &lt;p style="mso-pagination:none;mso-layout-grid-align:none;text-autospace:none;" class="MsoNormal"&gt;&lt;span style="font-family:Arial;"&gt;Buy the Good Seasons Italian dressing mix (get a four pack), buy a good balsamic vinegar and a rice
wine vinegar. I also bought the good seasons dressing mix bottle. Don&amp;#39;t follow
the directions on the packet, do this:&lt;/span&gt;&lt;/p&gt;
&lt;p style="mso-pagination:none;mso-layout-grid-align:none;text-autospace:none;" class="MsoNormal"&gt;&lt;span style="font-family:Arial;"&gt;Mix 1/2 cup balsamic, 1/4
cup rice wine vinegar, 1/2 cup plus two tablespoons water, and 3 packets
dressing mix into a small sauce pan, or microwave safe bowl (preferably a
measuring cup with a spout). Heat to just before boiling... Let sit until room
temp, then pour into a bottle and keep on your counter or in pantry (don&amp;#39;t
refrigerate).&amp;nbsp;&lt;/span&gt;&lt;/p&gt;
&lt;p style="mso-pagination:none;mso-layout-grid-align:none;text-autospace:none;" class="MsoNormal"&gt;&lt;span style="font-family:Arial;"&gt;&lt;span style="font-family:ArialMT;"&gt;There is no oil in it, so no fat, and it won&amp;#39;t go rancid in your pantry. You can add a tbsp

&lt;p&gt;1 Lb of Ground chicken&lt;/p&gt;
&lt;p&gt;1 can of Fat free Cream of Chicken soup&lt;/p&gt;
&lt;p&gt;1/4 C &amp;nbsp;buttermilk&amp;nbsp;&lt;/p&gt;
&lt;p&gt;2 Eggs&amp;nbsp;&lt;/p&gt;
&lt;p&gt;1-2 tsp of Cayenne Pepper (for that extra kick)&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Bread Crumbs (Panko if you can get it)&amp;nbsp;&lt;/p&gt;
&lt;p&gt;1 loaf pan&lt;/p&gt;
&lt;p&gt;In a large bowl &amp;nbsp;Combine the ingredients in a Large bowl Put enough bread crumbs to form a loaf but not too much to make it look dry.&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Once combined place Turken in a loaf pan Cover with Foil&amp;nbsp;Preheat oven to 350&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Cook for 20-30 mins It may be less cause ground turkey and chicken does not take long to cook&amp;nbsp;&lt;/p&gt;
&lt;p&gt;If you have a large Family double the meat&amp;nbsp;&lt;/p&gt;

&lt;p&gt;Serves: 4 servings &lt;/p&gt;

&lt;p&gt;&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;1 tablespoon vegetable oil, 1 turn of the pan (I use 1/4-1/2 cup veggie or chicken broth)&lt;/li&gt;
&lt;li&gt;1 pound ground sirloin (I use lean ground turkey)&lt;/li&gt;
&lt;li&gt;Salt and pepper &lt;/li&gt;
&lt;li&gt;2 hog dogs, sliced into 1/2- inch pieces, she used huge hot dogs (I used 4 turkey hot dogs Ball Park ones have 45 calories and 0 fat per link)&lt;/li&gt;
&lt;li&gt;1 small onion, chopped &lt;/li&gt;
&lt;li&gt;2 teaspoons Worcestershire sauce &lt;/li&gt;
&lt;li&gt;2 tablespoons chili powder &lt;/li&gt;
&lt;li&gt;2 teaspoon ground cumin &lt;/li&gt;
&lt;li&gt;1 (8-ounce) can tomato sauce &lt;/li&gt;
&lt;li&gt;1 sack yellow corn tortilla chips (used baked tortilla chips)&lt;/li&gt;
&lt;li&gt;1 sack, 10 ounces, shredded yellow Cheddar (fat free cheddar cheese)&lt;/li&gt;
&lt;li&gt;Sour cream, garnish (1 tablespoon fat free sour cream)&lt;/li&gt;
&lt;li&gt;Salsa, garnish (1 tablespoon but this is&amp;nbsp;low cal)&lt;/li&gt;
&lt;li&gt;2 scallions, chopped &lt;/li&gt;
&lt;/ul&gt;
&lt;p class="rcp-wrap clrfix"&gt;&amp;nbsp;&lt;/p&gt;
&lt;p&gt;Heat a medium skillet over high heat. Add oil (this is where I add the chicken 1/4 cup chicken broth and add more if needed and do more of a stew/poaching method) and the&amp;nbsp;beef, and begin to brown and crumble with a wooden spoon, about 2 minutes. Season with salt and pepper, then add chopped hot dogs and continue browning, another 3 minutes. Add onions and seasonings, Worcestershire, chili powder, and cumin. Cook another 3 to 5 minutes. Add tomato sauce and simmer 5 minutes more. &lt;/p&gt;
&lt;p&gt;I skip the next step because it is hard to control the portion when it is dumped in a casserole dish.&amp;nbsp; I count out how many chips for the recommended serving found on the back of the bag.&amp;nbsp; Put on the chili mixture, top with 1 tablespoon fat free cheese, 1 tablespoons fat free sour cream and 1 tablespoon salsa.&lt;/p&gt;
&lt;p&gt;Preheat broiler. &lt;/p&gt;
&lt;p&gt;Arrange corn chips on a platter or in a casserole dish. Top the chips with the cooked chili dog topping. Cover the chili dog sauce with cheese. Melt cheese under hot broiler, 2 minutes, until melted and bubbly. Garnish with sour cream, salsa and chopped scallions. &lt;/p&gt;
&lt;p&gt;The recipe as she has it is around 960 calories and 55 grams of fat&lt;/p&gt;
&lt;p&gt;My version 429 calories and 7 grams of fat.&lt;/p&gt;
&lt;p&gt;I can usually get 6 servings out of this recipe because 1/4 of the recipe is just to much. I take the serving size of chips,&amp;nbsp;but place 1/6 of the&amp;nbsp;chili mixture&amp;nbsp;on top of the chips.&amp;nbsp;Then I have reduced the calories even more to&amp;nbsp;355 calories and 5 grams of fat.&lt;/p&gt;
&lt;p&gt;So take a recipe and see where you can use lower calorie/fat ingredients.&amp;nbsp; I have been able to reduce calories and fat in quite a few recipes.&amp;nbsp; There have been some recipes where I haven&amp;#39;t been able to adjust and then I reserve that recipe to having once or twice a year where there are a lot of people to help eat it.
