One can of diet pop (any flavor) and one box of cake mix (again, any flavor). Mix together until

blended well. I used my mixer for about 2 minutes. Spray a cake pan (13' x 9') with Pam and dump the mixture in. Bake at 350 for

about 30 minutes or until you can insert a knife and it comes out clean. (You guys know this already.) The cake is a little more

dense than standard cake. More like the texture of a brownie. Top with fat free Cool Whip.

If you cut the pan into 12 servings each slice equals 14.2 calories and .3 fat. (these totals are without the topping, of course.)

Also, think of the possibilities. I made it just the other day with yellow cake mix and one can of diet A&W root beer. The next time

I think I'll use a white cake mix and add diet orange soda...chocolate cake with diet cola or diet Dr. Pepper....spice cake mix with

diet Sprite.

I hope you enjoy it!!

I like to eat dessert later at night, not with my meal, so I can't include the fat in my meal/with my pill. I'm trying different frozen yogurts/low fat ice creams but find I really miss the creaminess and its not the same. Then I made fat free pudding (regular instant pudding mix/skim milk) and started eating it with fat free cool whip. YUM. It's so creamy and refreshing I like it much better than the ice cream substitutes. It has NO fat so I don't have to worry about when I eat it, and it's only about 130 calories depending on portion. I usually have no problem needing the extra calories for the day, and its a good source of calcium as well. I look forward to it all day!

Peanut Butter cup dessert......YUMMY

Take a fudgesicle, scrape it off the stick, and put in a microwave safe container. Nuke it for about 10 sec, to where it is still a litle thick and frozen. Add a Tb (or whatever amt you like) of peanut butter and stir. Add dollop of fat free cool whip on top. Tastes like a Reeses PB cup, and only fat is the amt of PB you put in it.

Anyone have a recipe for a cheese cake?

I attempted this with egg whites, fat free cream cheese, and equal as replacements.
Mix the two together and bake as directed on the cake box. You've added fiber and nearly eliminated the fat. Here are the nutritional stats for you if you cut the whole thing into 28 pieces:

82 calories, 1.75 fat, .64 sat.fat., 0 chol., 159 sodium, 16 carbs, 1 fiber, 9 sugar, 1.1 protein, 44.6% vitamin A, 2.75% calcium, .25% vitamin C, 4.78% iron.

One chocolate cake mix

1 can of pumpkin

1/2 cup of water

Mix very well. Pumpkin tends to take longer to mix up due to some sort of grit but if you mix well in mixer you will be fine

Put in a greased pan, I use Spray Pam. Bake like the directions for a regular cake. I cut it in 12 pieces. I put fat free cool whip for icing. Very good. I had friends over and they didn't even know what was in it, they all said how good this cake was.
