    The cornflakes are good and you can also do this with porkchops.

    the low carb crumbs I use is 110 cal per 1/3 cup 4 net carbs 0 fat.   I have been buying the smart balance oil, but baking is probably better but sometimes you just have to have that crispy crunch.  But I am going to try the corn flakes in the oven.  I dont eat chicken myself,  but I cook for a few people in the neighborhood and they are getting leaner and healthier along with me lol.  I eat mostly fish, sea food, vegies, fruit and whole grains,  and on a holiday or special occation a smoked turkey.  But so far my ladies I cook for all have said the food is just as good and they are happy that I care awww

    Hi Rainbird, you will get the crispy crunch as if you fried it in deep oil; a serious crunch.  I made it Tuesday night with my special potato salad and my guy went crazy-retarded!  Me to, it was so good.  I sliced it up last night and we did it again.  You can't beat the flavors of leftovers.

    Special Potato Salad

    6 boiled potatoes cut in quarters

    1/4 c sliced black olives

    3 roma tomatoes quartered

    1/4 c diced red onion

    1/4 c avocado in small dice

    1/4 c scallion (green part only/white part can be used for another salad)

    1/4 c. cilantro or more to taste

    1/4 c red and yellow and orange bell peppers (if desired)

    salt and pepper to taste

    1/2 c mixed baby lettuces (variety bag)

    4 Tbl fat free Italian Balsamic Dressing or whatever low calorie dressing you desire.

    Enjoy!

    This salad is so good, careful, it'll make you step on somebody!

    THat is a good idea!  I have never thought of that.  Sometimes it is tough to eat right when flavor is lacking.  ESPECIALLY, when you are used to yummy southern cookin'.

     When you use an outer crust you can also try corn falkes they are low in calories and very low in fat
