i was looking at one of my alli books and i was wondering if i need to watch just the total fat on the food labels. are do i need to check all fat, saturated etc. thanks

In terms of losing weight the total fat is important. You always want to stay within the level of fat grams recommended for you. For good health and nutrition you certainly want to try to keep the saturated fat to a low level.
However, the Sample Menus already take that into account for you. You don't have to eat the exact items to get the benefits of the Menus, but if you eat similar types and amounts of food you should be fairly close to the way the Alli menus are designed.
Finally, keep in mind that animal products - meat, dairy, cheese - contain the most saturated fat (SF). Meat also included poultry and fish -- though the amount of SF is much lower than in beef. However, those three foods also provide important vitamins and minerals so they don't have to be excluded just because they contain SF -- we should just be mindful of how much we eat.
