    blackened talapia with pickle onions(spicey not hot)

    2 med. talapia fillets                                                                                                          1/2 cup apple cider vinegar  1/2cupwater                                                                                                                                      2tsphot sauce                                                                                                                                  1 clove garlic,finely minced                                                                                                  1 sm. onion                                                                                                                 mild bananna peppers(rings) ABOUT 8 RINGS                                                                                         salt/pepper                                                                                                                        icant believe its not butter(ICBINB) spray                                                                                                                                                                                                                                                                                                                                                                                 place   place fish into a deep bowl (for marinating)add vineger 1 /2 cup water,garlic,salt and pepper and hot sauce to bowl,allow to marinate for at least an hour(i prep the night befor and marinate for 1 day the longer  the better) pre heat oven to 350 ..heat a heavy skillet or nonstick pan if skillet not availible(skillet prefered)to a med.heat.take off the spray top of ICBINB and add 2TBLS OF ICBINB to pan and wait untill it sizzles place fish directley on top of the sizzle.allow to cook untill edged turn a caramel color then scrape and lift with a thin flipper,lol.allow to cook on the next side untill edges are caramel add more salt and pepper to taste and press on fish on both sides untill fish sticks and becomes a dark caramell color with dark edges and center parts(careful when lifting,always scrape under first)wrap each fish in foil and lay directley on oven rack,then on the same pan add 1 tbls of ICBINB  and add slice onions and peppers ,cook until carmalized,season onion mix to taste,place fish on platter top with onion mix and enjoy.i enjoy over 1 cup of rice.COOK TIME IS 15 MINUTES
