    Cooking Lights Crab & Shrimp Salad YUM

    HEY ALL , I'VE GOT TO SHARE THIS AWESOME RECIPE WITH YOU .

    I FOUND IT ONLINE AND MADE IT LASTNIGHT , EVERYONE RAVED , AND WE WERE SO FULL AND SATISFIED... AND THERE WERE LEFTOVERS !

    1/2 LB PEELED & DEVEINED SHRIMP

    1/2 TSP SALT , DIVIDED

    1 C. FRESH OR FROZEN CORN KERNALS , THAWED ,

    1/3 C CHOPPED ONION

    1/3 C  CILANTRO CHOPPED

    1/3 C AVOCADO DICED

    1/2 LB LUMP CRAB MEAT   (I used imitation...cheaper and less calories and cholestrol)

    1 JALAPENO SEEDED & CHOPPED

    3TBS FRESH LEMON JUICE

    2 TBS EXTRA VIRGIN OLIVE OIL

    6 C TORN LETTUCE

    1/4C TOASTED COCONUT  (I omitted this , I dont care for it)

    heat a med skillet over med high heat. Coat pan with cooking spray , add shrimp and cook about 4 mins , or till done. Remove from pan and coarsly chop. set aside

    combine corn , onion , cilantro, avocado, crab , and jalapeno in med bowl.  GENTLY stir in the chopped shrimp  in a small bowl combine with a whisk the lemon juice , olive oil , and salt drizzle over the seafood mixture , combine gently  Divide lettuce among 4 plates , top with shrimp mixture , sprinkle with coconut

    YIELD 4 Servings

    Calories 223  (34% from fat)  FAT  8.5g ( Sat 2.2.g,mono 3.6g) PROTEIN 24g: Cholestrol 124mg , Calcium 94 mg , sodium 613mg , fiber 3 g iron 3 mg  carbs 16 g

     

    THIS RECIPE , I FOUND TO BE HUGE !  I ATE A 1/2 PORTION AND ADDED A PIECE OF CHEESE BREAD AND A GLASS OF WINE , AND WAS STILL UNDER ON CALORIES AND FAT GRAMS

    I am making this again , but with a slight modification , For lunch I am putting a handful of chopped lettuce (approx. 1/3c.) in a multi grain wrap , with a 1/3 portion of the crab and shrimp mixture . Makes a wonderful lunch for about 1/2 the calories and fat of the original recipe. A great use for the leftovers . Hope you try this , you won't be disappointed .

    This sounds good, so you don't mix the crab and shrimp mixture with the lettuce, just serve over or with lettuce correct?

    Thats right , Not a mixed salad , per se . Just a salad with a tasty topping.  The next day , I take whatever is left and make wraps with whole grain tortilla-like wraps its usually about 1/3 of a portion , per wrap , So Good , and good for you .  Ohe of the whole familys faves .
