    So GOOD!

     

       Hi All,

     

    So I thought I would post a lunch idea, it’s also a great dinner idea as well and I don’t seem to get sick of it because you can alter it in so many fun ways!

     

    I usually eat this for dinner and then just make one in a Tupperware while I make the dinner.  I throw the Tupperware in the fridge overnight and add the sour cream and guacamole and sriracha in the morning as I am heading out the door, throw the cover back on and shake!!! haha

     

    You Need:

     At least 1 lb of Lean Ground Turkey (8 g fat, 160 cal for 4 ozs)

        I always make more because it goes fast!

     Salad Fixings:

     Onions

     Lettuce

     Tomatoes

     Peppers

     Sugar Snap Peas

     Broccoli

     

     Fat Free Sour Cream

     

     Sriracha (crushed red pepper sauce, spicy, found in Asian section of supermarket)

     

     Optional (for more fat): Guacamole (I don’t always have time to make it, but I buy it from trader joes, it’s salsa and gauc combined and 2 grams of fat for two tablespoons)

     

    Prep:

     

     Cook up the ground turkey in a skillet sprayed with a Fat Free Oil Spray.  I find using a potato masher to smash out the ground turkey works really well.  While cooking grind fresh black pepper into the pan and add a good pinch or two of salt.  Also while cooking prep all your salad fixings: shred the lettuce (cut really thin with knife), chop tomatoes, onions, peppers, sugar snap peas, broccoli, ect…

     

    Once done, transfer turkey to a strainer to get rid of any excess water.

     

    Put your salad stuff into a large bowl.

     

    Weigh out 2 oz or 4 oz of the turkey, depending on what you want.

     

    Add the turkey on top of the salad fixings.

     

    Add as much sriracha as you want.  Add two tablespoons of FF sour cream and 2 tablespoons of the guacamole, if you want it.

     

    Mix together…Enjoy!

     

    If you would rather it in a wrap, just put the sour cream down first and add some dabs of sriracha.

     

    I also just made Shepards Pie with ground turkey, corn and mash potatoes that I fixed up with FF sour cream, FF cream cheese and it tasted awesome!
