Freezing your own meals is very easy. Cook whatever it is you like, as much as you like. Cool it to 70 degrees F, then correctly portion it out in some kind of plastic container with a lid, and if you are concerned of freezer burn, wrap the entire container in very tight plastic wrap or tin foil. These can keep for up to 6 months, but I wouldn't go that far. A week or two is much better quality.
Fat v Calorie: Haven't had issue cos I just eat whatever in 1/2 or less portions to control, and eat avocados and nuts alot.
How do I know this? I've been a cook/chef for nearly 20 years.
