It's fine to make you're own menus and/or use your own recipes. The Sample Menus are meant to be used as is -- or as a guide for how to plan your calories and fat throughout the day.
The key is to have those calories and fat + a variety of foods. No everyone on alli is a cook and many of those who are not have done really well!
