    Spaghetti Sqauash (what do u do with it)

    Hi, My husband brought home sp. squash last nite.  Im staring at it and dont know any recipe for it.  I am a vegetarian.  Any idea what i can do with it.  I do eat lots of salads and stuff.  i am boiling it right now.  But need some recipe to make with it.

     I suggest you Google "spaghetti squash recipes", or go to some websites like Sunset Magazine, Cooking Light, or Epicurious.

    Spaghetti squash is wonderfully versatile and can be used in soups, salads, or main courses.  Some vegetarians like to pull it from the shell (after cooking) and top with spaghetti sauce (some veggies in there are good too), and have it as a main course with salad, whole-grain bread and dessert.

    I remember my mother making it a few times... I know she sliced it in half, put it on a foil lined jelly roll pan cut side down and baked it.  I remember having fun pulling that "spaghetti" from each side, we topped it with salt and pepper.  I know there was some liquid involved as well, unfortunately, I don't remember. I'm sorry about that.  It was usually a side dish for us.

     One thing I did since I am usually low carb, is cut it in half lengthwise, lay each half (insides down) on a lightly oiled or sprayed cookie sheet, and stab with a fork a few times.  Place in oven at 375 for about 30 minutes, then pull them out and let sit for at least 5 minutes.  Using an oven mitt to hold each half, scrape the innards out with a fork into a large bowl.  It will shred like thin spaghetti.  You can serve it with turkey meat sauce for a great healthy meal.  My hubby and 5 year old both love it.  My son doesnt even realize it isn't really pasta. :)

    I know you said you are a vegetarian, but if you could find something to use in place of ground turkey (and for those that aren't vegetarians), here is an absolutely delicious recipe from Martha Stewart's website. We have it at least a few times a month, and my entire family (kids too!) just love it, they ask for it all the time:

     I top it with the same stuff I would top regular spaghetti.
