    Chicken Sausage

     Wow I found this really great restaurant in GA called The Flying Biscuit. I was trying to find something on a breakfast menu besides turkey bacon and turkey when I found this place. They serve what is called a chicken sausage and it was delicious!

    This looks like a fun place (www.flyingbiscuit.com) and gets good reviews.  I can't find nutrition info on their items so you might want to ask if this is going to be a regular place for you.

     You can also make your own chicken sausage.  I was watching Rachael Ray and she has different variations on making chicken sausage.

     One version is adding 1 1/2 tablespoons lightly toasted fennel sead, 1 teaspoon crushed red pepper flakes (adjust to your tastes) , 1/4 teaspoon allspice, 3 tablespoons finely choped rosemary, 4 cloves of garlic finely chopped (I use a food grater) to 2 pounds ground chicken (or turkey).  It also asks for the zest and juice of one orange, but we don't care for the orange taste so we leave it out.

    Then I just shape into patties and freeze.

    But she has lots of different variations of what she adds to ground chicken or ground turkey.  She likes to make huge patties, but I usually end up making 2-3 patties out of what she likes to make one patty with. 

    My favorite one is this one 1 pound ground chicken breast, 1 small apple peeled and finely chopped (I used a food grater), 1/4 sugarfree maple syrup, 1 tablespoon grill seasoning, 1 teaspoon poultry seasoning, 1/2 teaspoon ground cinnamon and 1/4 teaspoon nutmeg, she shapes it into 4 patties, but I shape mine into 8. She makes this into a sandwich with an english muffin and eggs.  I subsitute egg beaters.
