Use whatever vegetables you do like! It's fine to make your own meal plans and use other recipes if you prefer. The Sample Menus are to help those with a lot of structure; and to provide some ideas for those who don't.
I'd suggest you eat a few more fruits (of different colors) so you can get the similar nutrients that vegetables provide.
